What makes this different

Grease does not stay in the kitchen. It moves into the dining room on air and on shoes, and it settles on skirtings, chair legs, banquette bases and the bottom third of walls - exactly the height a seated customer looks at. We degrease those low surfaces on a fixed cycle instead of waiting until they are visibly dirty, because once grease has set it needs a machine rather than a cloth. Toilets are the other test: they get done on every single visit.
